So I see now the HC's come in Nickle, Raw Nickle, then Nickle and Raw Nickle open face. What are the difference here? Do some age nicer than an other? Any affects on tone?

raw nickel is a bare nickel cover, not plated, not polished. nickel is polished then nickel plated. both will age, raw will age faster and is not polished to begin with.
